From Mom’s Recipe Book: Penne A La Vodka

Ingredients:

4 Tbsp Olive Oil
4 Garlic cloves (thinly sliced)
1 Small yellow onion (finely chopped)
1 Tbsp sugar
1/4 lb Prosciutto (thinly sliced)
2 12oz cans of chopped tomatoes
1/4 cup vodka (taste)
Red Pepper Flakes
Fresh Basil
1 lb box of Penne Rigate
1 cup Half & Half
Fresh Parmesean 

Directions:

  1. Heat Olive oil in a large sauce pan with sliced garlic
  2. Add onion, saute 3-5 minutes until soft
  3. Add sugar, allow to carmelize (about 5 minutes)
  4. Ad sliced prosciutto and saute until soft (5 minutes)
  5. Add chopped tomatoes and turn heat up to medium
  6. Add vodka and allow to come to boil, keep covered.  Bring to a boil and leave at medium heat 8-10 minutes
  7. Add salt & pepper
  8. After 40 Minutes, vodka sauce will slowly thicken.  Smash tomatoes into sauce, add red pepper flakes and basil
  9. Simmer for an additional 10 minutes and toss with hot pasta and half & half over low heat
  10. Sprinkle with parmesan and serve
