From Mom’s Recipe Book: Penne A La Vodka
Ingredients:
4 Tbsp Olive Oil
4 Garlic cloves (thinly sliced)
1 Small yellow onion (finely chopped)
1 Tbsp sugar
1/4 lb Prosciutto (thinly sliced)
2 12oz cans of chopped tomatoes
1/4 cup vodka (taste)
Red Pepper Flakes
Fresh Basil
1 lb box of Penne Rigate
1 cup Half & Half
Fresh Parmesean
Directions:
- Heat Olive oil in a large sauce pan with sliced garlic
- Add onion, saute 3-5 minutes until soft
- Add sugar, allow to carmelize (about 5 minutes)
- Ad sliced prosciutto and saute until soft (5 minutes)
- Add chopped tomatoes and turn heat up to medium
- Add vodka and allow to come to boil, keep covered. Bring to a boil and leave at medium heat 8-10 minutes
- Add salt & pepper
- After 40 Minutes, vodka sauce will slowly thicken. Smash tomatoes into sauce, add red pepper flakes and basil
- Simmer for an additional 10 minutes and toss with hot pasta and half & half over low heat
- Sprinkle with parmesan and serve
